Default 88 Accord LXi no CEL with disconnected O2 sensors

I need some professional help. My 88' 2.0 KX is NOT indicating a problem even though I have disconnected both of the O2 sensors on the exhaust manifold.

I've taken a reading from them with the engine up to operating temp and both sensors give me 0.0v readings. When I go to start the car the yellow engine light illuminates so I know the bulb isn't burned out. I also opened the plastic access door under the rear of the drivers seat to see if there was an LED lit there, but no dice. I removed #11 fuse under the hood for 2-3min to reset the PCM and had no change in the behavior. My fuel mileage on open roads is ~27mpg with ~400lbs on board (not just me, but gear too!)

Why doesn't the PCM (ECM) know there's no O2 feed back?
What indicators are used to determine closed loop operation?
How come there are two O2 sensors right next to each other, and while they are booth single wire units, their depth and girth are quite different?

Thanks for bearing with me, I've owned diesels for the past ten years and almost forgot how gas powered ICE's work. TIA
