My tire shop says I need aftermarket parts to fully align my rear wheels because the factory rear end doesn't allow camber (toe?) to be adjusted. The dealer says this isn't necessary, but I haven't heard how alignment is done without it.Who's right?

if the vehicle has a modified ride height then yes it will need them. also the factory adjustment allows for only so much adjustment. if they have reached the limit, then yes you will need a rear toe kit for that vehicle.
