sounds to be about average. Operating temp is very high. fans don't operate till over 200 F. If your temp fluctuates at all,or it doesn't orver heat its probably working.Its an easy test to find out but it depends on you mechanical skills.Buy a service manual and start reading

well take the thermodtat out and put some hot water on a pan and put it on the oven whatch it work and than put it in cold water and see if it opend up if it closes and opends its good but if it does not buy one there fairly cheap
