Default Temp Gauage Jumps to High, then back down

My kids 93 Accord LX car has had some problems overheating. Yesterday we replaced thermostat, thermometer sensor, and fan temp sensor. Seemed to be okay last night in a test run. This morning while driving it jumped to high for three minutes (she said she couldn't pull over, on bridge) and then went back to normal.

The problems we had before were that it was overheating and the dash board temp readout was unreliable (jumped all around the place). The readout seems to be solid now. What could cause it to go high and then drop back to normal?

We bled it after refilling it last night. Fans come on when jumped (and appear to come on when the engine gets hot). Antifreeze levels appear to stay consistent.

It looks like there must be a short in the temp. I got home and test drove it. It jumps to high and I pound the dashboard and it drops back down.

One other thing though, should a short ride (7 miles, 60mph) on a cold morning the engine hot enough that the fan would need to stay on a few minutes when I stopped?
