your car will overheat and eventually stop working when it runs out.

if it is just low in the reservoir like near the low level indicator it doesn't really matter *but you should top it up to the full level indicator when engine is cold*

if it is really low the engine will have insufficient cooling and overheat permanently warping metal in the engine meaning the gaskets can't seal together properly or cracking important parts of engine metal
