Default Transmission while driving?

I recently got a Honda Fit 08 Sports Model. I've always been driving automatic before this one. In addition to the normal automatic transmission positions, it has a paddle shifter and an S position in its transmission, which I have never used before.

My question is can you shift from D to S or vice versa while driving, without damaging your transmission? That way, I can practice on the manual and quickly switch back to automatic when I need it? Thank you.

It's quite funny, you call manual what we, in Europe, call automatic (even in S mode). Actually, Honda Fit has a CVT transmission so, even in S mode, gear are "fake", the manufacturer created locking points in the torque, but it could easily be created without them; it's quite complicated to explain it without a drawing, but just imagine it would work more or less like a moped. Of course drivers would dislike it, that's why the "simulate" gears.

When you shift between D and S you don't operate physically on any mechanical device, it's just like pressing a button. (on some cars you actually have a button or a wheel selector). so yes, you can shift it while driving without problems.
