I have a 2005 Pilot LX with gray plastic panels about 2/3 down on the
side doors. Has anyone tried to remove the panels? Are there any
screws or just glue underneath?

chances are there are holes and clips as well. one of the online honda
places should have a schematic- id look for the "door trim" page.

There's probably a combination of clips and two-sided foam tape, if it's
like the gen 1 Cr-V.
