I'm sure you would be fine with that. Just taking out the seat frees some load,
so figure
175# passenger
200# additonal load
375 rated load

You would be
400# load
-30# seat
370 actual load.

And the factory rating is neccessarily conservative.
I don't know that I'd take on any windy mountain roads so loaded.
