check the thermostat and the water pump... honestly, i cant diagnose a problem without seeing it, but it does sound like a thermostat, plus its the cheapest and easiest thing you can start with in your diagnosis. also check if your radiator fan is engaging, that might be another reason your car overheats the way it does.
