Yes, there is a way...
IIRC, turn the knob all the knobs all the way to the left* (vent and temp).
With the Ignition key at position 1, hold down the AC and REC buttons.
Turn the key to position 2 while holding the buttons until their lights
flash (about 5 or 10 seconds).
That should be it, you can now turn off your AC while on defrost.
Worked on my 01 Civic.

*The process is reversible too, the only thing i'm no sure of is the
position the knobs have to be in (Cold and Vent or Hot and DEFROST), or
whether that really matters...
