You should be able to reach under the dash and find the little box that makes the chiming noise. You can then just unplug the wire harness from the box and the chiming will stop. I did this on my Miata with the door open chime. The box will be vibrating when it makes the chime. You could also locate it in a repair manual. Should be under the driver's side dash, probably close to the inner fender wall.
